Peter Merriman has formed a management company called MPK Management Co. LLC that will hold the liquor license for Monkeypod Kitchen’s new Ko Olina location opening this fall, according to a spokeswoman for the chef. This will be the second Monkeypod Kitchen by Merriman location in Hawaii. The first opened at the Wailea Resort on Maui in February 2011. The 10,000-square-foot Oahu restaurant, to be located in a two–story building at the Ko Olina Resort, will include an exhibition kitchen, a bar with 36 craft beers and a stage for live music. Handcrafted Restaurants LLC is the parent company of the Monkeypod Kitchen restaurant and is a partnership between Merriman and restaurateur Bill Terry.
